The pasta station

Flour, eggs and a long afternoon.

At four o'clock the station in the middle of the roof starts turning out the night's pasta. Semolina and double-zero flour, deep-orange yolks, a wooden board and two people who have done this thousands of times. Sit at the station counter and you can watch your dinner being made, start to finish.

  • TagliatelleRibbons as wide as a thumbnail. Ragù clings to them.
  • AgnolottiLittle pinched pillows, filled with ricotta.
  • PappardelleThe widest ribbon. For mushrooms and slow sauces.

Questions

What happens if it rains?

The canopy covers most of the tables and we have heaters for cool nights. In real storms we move everyone to the glassed-in corner.

Can I sit at the pasta station?

Yes. The station counter has eight stools and is held for walk-ins and couples. Ask for it when you arrive.

Do you have vegetarian or gluten-free pasta?

Several pastas are vegetarian every night, and we keep dried gluten-free pasta ready for any sauce.

Is the roof accessible?

There's an elevator to the top floor and a short ramp onto the deck.
