The cover story
Lumbre is a birria truck. Beef and chiles braise low and slow all day, then go into crisp, cheese-sealed quesabirria with a cup of consomé on the side for dipping.
Feature
Birria starts the night before. Guajillo and ancho chiles are toasted, soaked and blended with garlic, clove and a little vinegar into a deep red adobo. The beef sits in it overnight, then goes into the pot first thing in the morning and stays there, barely simmering, until it falls apart under a spoon.
What is left in the pot is consomé: the rich, brick-red broth that carried all of that flavor for hours. We skim it, season it and serve it by the cup, with onion and cilantro on top and lime on the side.
Every tortilla is dragged through the fat skimmed from that broth before it hits the plancha, which is where the color and the crisp edge come from. Then comes the meat, melted cheese for the quesabirria, a fold, and a few more seconds on the heat.
It is a slow dish served fast. By the time the window opens, the long part is done. All that is left is the griddle, the cup and you.

A short guide
Straight off the plancha, while the cheese is still pulling and the edges are crisp.
Go all the way into the consomé. The tortilla holds up; that is what the griddle is for.
A squeeze of lime and a spoon of onion and cilantro cut through the richness.
Whatever is left in the cup is the best part. Nobody will judge.

Weddings, office lunches, block parties and late-night after-parties. We bring the truck, the pot and the plancha, and serve straight from the window.
Questions at the window
It is rich and deeply chile-flavored rather than hot. The heat lives in the salsas at the window, so you choose how far to go.
It is the broth the birria braises in all day. We serve it by the cup for dipping or sipping, topped with onion and cilantro.
Yes. Ask for the cheese quesadilla on a red-griddled tortilla, plus elote en vaso and frijoles charros.
